Gloria Ferris, New Age Frontier Woman

This morning, we had a friend coming over for coffee and had to quickly improvise on coffee cake when we found we had scuttled the last muffin pan and not replaced it. Not having any baking powder in the house, I had to make some quick decisions and show some spunk and resourcefulness. New Age Frontier Woman that I am, I raced to the internet and looked up the ingredients for field-expedient baking powder. They are?

1. 1 T. baking soda
2. 1 T. corn starch
3. 2 T. cream of tartar

One teaspoon of this mixture is equivalent to one teaspoon baking powder.

The coffee cake turned out swell. The recipe comes from an old friend, Mary Esther Gantz, nee Ivey, daughter of Sula Ivey, originally of 3304 Archwood Avenue, who spent her last years an expatriate in Pittsburgh.

Here?s how the quick coffee cake is put together?it takes about 60 minutes, start to finish.


1 cup sugar 1 cup flour
3/4ths cup shortening 2 tsp. Baking powder

Crumb like pie dough. Take out 3/4ths cup crumbs. Add a little cinnamon and save for topping.

Add:
3/4ths cup milk, 2 eggs 1 tsp. vanilla
Nuts, fruit, etc., may be added if desired.

Add to pie dough mixture and beat well.

Pour into pan and sprinkle with cinnamon laced crumbs

Bake 30-45 minutes in a preheated 325 degree oven.

    Oh my god. You don’t know how many times I’ve needed a baking powder substitute and haven’t been able to figure it out. This one is totally getting bookmarked.
